Dinner at our London home with Paul and Marleen.
The champagne is Moet & Chandon Cuvee Dom Perignon 1999. Bright, pale gold.with tiny lively bubbles. Delicious medium + intense nose of citrus and yellow stone fruit, green apple and some light toasty notes. On the palate a medium body with medium acidity balancing the citrus fruit, savoury hints and an overall oiliness. Well balanced with smooth texture. A lovely champagne just starting to show it complexity.
The white wine of the evening is Domaine Louis Carillon et Fils Puligny-Montrachet 1r cru Les Referts 2002 from magnum. Impeccable bottle. Medium gold. Medium intense nose with yellow fruit, pear, citrus and honeysuckle. Palate is dry and shows a medium body with medium + acidity and medium + intense fruit of citrus, melon with some minerals and spicy notes on the long finish. A very good white Burgundy.
