Lunch with Alvaro at Wiltons in Jermyn Street. Drinking Domaine Christian Moreau Chablis Grand Cru Les Clos 2012. As Rosemary George in her book The Wines of Chablis (1994) states, "Chablis is Chardonnay but not every Chardonnay is Chablis." This is definitely a very good Chablis. Pale lemon colour. Medium intense nose with green apple, pear and a hint of oak. The palate is dry with medium body, medium + intense with a refreshing, high acidity. There is crisp green apple again, notes of citrus, especially lime, and a pronounced minerality. Long finish. This will further develop as its rich fruit is well balanced by the crisp acidity.
