They can be thematic (for instance, expressions of pinot noir, Bordeaux Left Bank versus Right Bank) or just celebrate great wines with matching food. Case study: Babette’s Feast Revisited

A Scandinavian client wanted to replay the 1987 movie Babette’s Feast. Keeping as closely as possible to the original script and spirit of the novel (by Karen Blixen) and movie, the following dinner was put together. For environmental reasons the original dish of turtle soup was replaced by lobster soup. The preparation and sourcing of the wines took three months.
